  • "NEW "what you cooking? BQing (post some pictures)

    This is for PCP "Chris" He was a cooking the same thing I was getting ready to cook today when I called him! I use charcoal and he use gas

    I bet he didn't get a picture but I did! All you need is your bottom teeth for mine? Maybe none? Don't want to try that yet

          What powder did you use, and how did you get that effect??? Looks even harder than marblizing!

            the other night i was watching the food network and they had a show on about bbq'n and they said there is only 3 parts of the country that matter when bbq'n north carolina , tennessee and texas .... so come on duke spill the beans whats your technique .....


            o yea i saw this last night . so i had to go get me some for tonight .... just gotta find the time to cook em

              And Ted just where have you been dat burnit. I thought you had built yourself into an oven and no body missed you or something Hope all is going well with you and the family and you dad the most. I know he is your right and left hand.

              I was hoping you guys would enjoy the hard coating stuff and enjoy the coating and backing you can see and eat And looks like its a hit for sure. Even my dog know what is a cooking and the wife has to call him down with his whines and grumps if I don't give him some little tib bits soon enough. I know he would love the bones but it has got him before so he can't have any now. I want him to outlive me and keep the wife happy with his nature and being the best kid she calls him.

              Ok, What I use is easy to a point. First I do a good cover of Stubb's BQ spice rub and let it stay a room temp for 1 or more hrs. Then I give it a lite basting of a vinegar base BQ sauce. That is the only problem. Its made here a few miles down the road and he sells at the flea markets and Piggly Wiggly here carries it also but that is as far as it goes in NC. Its so good and light in its base but loaded with spices and you don't ever refrigerate it and its so tasty you can put it on you ice cream and dip your chips/bread/toast even the wife's little finger in it GOOD GOOD GOOD it is.
              You put it on the grill and sear the bottom side while the heat glazes the top and turn it over and put a little sauce on the back side then turn it back over when it soot's you and put the sauce on again and just keep it up for I would say 4 turn overs and try to watch out for the burning it does it in a flash. I use the Kingsford with the Misquote in it. If you have time and not in a hurry move the coals outward and it want burn so quick while you go back for that extra BEER or something!

              If any of you like the type of sauce I described he does make it in a pt size but we buy it by the gal. I guess I could get it and then get a cost on shipping and send it to you. No extra charge for packing it for you and I use FedEx and they give me a good deal and way better than the post office for sure.

              Just coat and eat and enjoy

              I am from mid TN and lived in NC from the 60's and I do the baby back ones but the big ones do great

                  Had to dag get some more and re-coat. Got to get another coater supplier? These just go away for some reason?????????????????
